Tofu Scramble

4-5 servings
 
This is a great way to start your day.  If the recipe seems like too much to do early in the day, then do it the night before and just heat it up in the morning.  I have added lots of veggies, but the spices and tofu are really the base.  Play around with different veggies to see what you like best.


Tofu Scramble

1 block of extra firm tofu, drained and crumbled
1/2 red onion, diced
1 cup of broccoli florets, steamed
1/2 cup grape tomatoes, quartered
1/2 cup red bell pepper, diced
1 1/2 tsp. garlic powder
1 1/2 tsp. onion powder
1/2 tsp. tumeric
2 Tbsp tamari
2 Tbsp nutritional yeast
Water for cooking
 
Heat a saute pan over medium heat. 
Add a few tablespoons of waterthe onions and saute until translucent.
Add in the crumbled tofu and saute for 5 minutes

adding water as needed to prevent sticking.
Add the garlic powder, onion powder and tumeric and saute another minute.
Add the tamari and nutritional yeast and cook one minute more.
Toss in the veggies and serve.
