Shittake Bacon
You can have your bacon and eat it too with this great recipe. Whereas bacon raises your cholesterol and hardens your artieries with each bite, shiitakes have the opposite effect. They do this by preventing too much immune cell binding to the walls of our blood vessel lining. How cool is that? They are also high in iron, B vitamins, niacine, choline, folate and D2.
Ingredients
1 package shiitake mushrooms,
cleaned & stems removed
2 Tbsp. water
1 Tbsp. maple syrup
1 Tbsp. nutritional yeast
1/2 tsp smoked paprika
1/2 tsp. liquid smoke
1/4 tsp. sea salt
Directions
Slice the mushrooms into 1/4 inch strips.
Place in a bowl.
Mix all of the other ingredients and pour over the mushrooms and stir until coated.
Line a baking sheet with parchment paper and spread out the mushrooms so that they are not overlapping.
Bake at 375 degrees for 20 minutes and then flip them over.
Put back in the oven and watch closely so that they don't overcook.
They should be ready in no more than 8 additional minutes.
Allow to cool and serve.
