Fried "Egg" Sandwich

You can have your bacon and eat it too with this great recipe.  Whereas bacon raises your cholesterol and hardens your artieries with each bite, shiitakes have the opposite effect.  They do this by preventing too much immune cell binding to the walls of our blood vessel lining.  How cool is that? They are also high in iron, B vitamins, niacine, choline, folate and D2.

Ingredients

1 block extra firm tofu, sliced into 1/2" slices

3 Tbsp. Dijon mustard

1/2 cup nutritional yeast

1 tsp. black salt (Kala Namak)*

2 Tbsp. olive oil

8 slices of whole grain bread, toasted

1/4 cup vegan mayonnaise

2 slices of romaine lettuce, washed and cut into 1/4 inch pieces

fresh ground black pepper

 

 

 

Directions

Preheat oven to 350 degrees.

Coat each slice of tofu in mustard and then dredge them in the nutritional yeast.

Set aside.

Place breaded tofu on a lined baking sheet and bake for 20 minutes, turning halfway through.

Allow to cool.

Dust with the black salt.

 

Coat each slice of bread with mashed avocado.

Lay three slices of tofu on each sandwich.

Top with lettuce, pepper, and another slice of bread.
